Ingredients
- 2 filet mignon steaks (6-8 oz each)
- Salt and black pepper to taste
- 2 tablespoons olive oil
- 1 cup mushrooms, sliced
- 3 tablespoons unsalted butter
- 1 teaspoon garlic, minced
- 1 teaspoon fresh parsley, chopped
Instructions
- Preheat your oven to 400°F (200°C).
- Season the filet mignon steaks generously with salt and black pepper.
- In a large oven-safe skillet, heat olive oil over medium-high heat. Once hot, add the steaks and sear for about 2-3 minutes on each side until browned.
- Add the sliced mushrooms to the skillet and sauté for 2-3 minutes until they start to soften.
- Meanwhile, in a small bowl, mix together the butter, minced garlic, and chopped parsley.
- Spoon half of the herb butter over the steaks and mushrooms, then transfer the skillet to the preheated oven. Bake for 8-10 minutes for medium-rare, or until desired doneness.
- Remove from the oven and let the steaks rest for a few minutes. Serve topped with the remaining herb butter and sautéed mushrooms.
