- 2 cups heavy cream
- 1 cup whole milk
- 3/4 cup granulated sugar
- 1 teaspoon pure vanilla extract
- 1/2 cup unsweetened cocoa powder
- 4 large egg yolks
Instructions
- In a saucepan, combine the heavy cream, whole milk, and sugar over medium heat. Stir until the sugar is dissolved and the mixture is hot, but not boiling.
- In a bowl, whisk together the egg yolks and cocoa powder until smooth.
- Gradually pour the hot cream mixture into the egg yolks while whisking continuously to temper the yolks.
- Return the mixture to the saucepan and cook over low heat, stirring constantly, until it thickens enough to coat the back of a spoon.
- Remove from heat, add the vanilla extract, and let it cool to room temperature.
- Once cooled, cover and refrigerate for at least 4 hours or overnight.
- Pour the custard base into an ice cream maker and churn according to the manufacturer’s instructions until it reaches a soft-serve consistency.
- Transfer to an airtight container and freeze for at least 2 hours before serving.

Handy Tips
- For an extra chocolatey flavor, add chocolate chips to the custard base while churning.
- Make sure to chill the base thoroughly before churning for the best texture.
Ingredient Swaps
- Heavy Cream: You can use half-and-half for a lighter version, but the texture may be less creamy.
- Granulated Sugar: Substitute with brown sugar for a deeper flavor.
