- 2 cups of diced apples (Granny Smith or Honeycrisp)
- 1 cup sugar
- 2 tsp ground cinnamon
- 1 tbsp lemon juice
- 1 tbsp cornstarch
- 1 package of refrigerated pie crusts (or homemade)
- 1 egg (for egg wash)
- 1 tbsp milk (for egg wash)
Instructions
- Preheat your oven to 425°F (220°C).
- In a large bowl, combine the diced apples, sugar, cinnamon, lemon juice, and cornstarch. Mix well until the apples are coated.
- Roll out the pie crusts and cut them into rectangles (about 3×5 inches).
- Place a spoonful of the apple mixture in the center of half of the rectangles.
- Fold the other half of the rectangles over the filling and press the edges to seal. Use a fork to crimp the edges for a decorative touch.
- In a small bowl, whisk together the egg and milk to create an egg wash. Brush the mixture over the tops of the pies.
