Ingredients
- 2 boneless, skinless chicken breasts
- 1 teaspoon taco seasoning
- 2 large flour tortillas
- 1 cup shredded cheddar cheese
- 2 cups romaine lettuce, chopped
- 1 cup diced tomatoes
- 1/2 cup black beans, rinsed and drained
- 1/4 cup corn (canned or frozen)
- 1/4 cup salsa
- 1/4 cup ranch dressing
Instructions
- Season the chicken breasts with taco seasoning and grill until cooked through, about 6-7 minutes per side. Let the chicken rest before slicing.
- In a skillet, place one tortilla and sprinkle half of the cheddar cheese on one half of the tortilla. Add sliced grilled chicken on top, then fold the tortilla in half.
- Cook the quesadilla until golden brown and the cheese is melted, about 3-4 minutes on each side. Repeat with the second tortilla.
- In a large bowl, combine chopped romaine, diced tomatoes, black beans, and corn. Toss with salsa and ranch dressing until well coated.
- Slice the quesadillas into wedges and serve on top of the salad mixture. Enjoy!
