Instructions
- Preheat your oven to 325°F (160°C).
- In a medium bowl, mix graham cracker crumbs, 1/3 cup sugar, and melted butter. Press the mixture into the bottom of a 9-inch springform pan.
- In a large bowl, beat the cream cheese until smooth. Gradually add 1 cup sugar and vanilla extract, mixing well.
- Add eggs one at a time, mixing on low speed until just combined. Avoid overmixing.
- Fold in sour cream until smooth. Pour the cream cheese mixture over the crust in the springform pan.
- Bake in the preheated oven for 60 minutes, or until the center is set. Turn off the oven and leave the cheesecake inside for an additional hour.
