- 1 1/2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 3 (8 oz) packages cream cheese, softened
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 3 large eggs
- 8 oz white chocolate, melted
- 1 cup fresh raspberries
- 1/4 cup raspberry sauce (for drizzling)
Instructions
- Preheat the oven to 325°F (163°C).
- In a mixing bowl, combine graham cracker crumbs and melted butter. Press the mixture into the bottom of a 9-inch springform pan to form the crust.
- In a large bowl, beat the softened cream cheese and sugar until smooth. Add vanilla extract and mix well.
- Add eggs one at a time, mixing well after each addition. Stir in the melted white chocolate until fully combined.
- Pour half of the cheesecake batter over the crust. Drop spoonfuls of raspberry sauce and fresh raspberries over the batter. Swirl gently with a knife.
- Pour the remaining cheesecake batter over the top and repeat the raspberry swirl process.
- Bake in the preheated oven for 60 minutes, or until the center is set. Allow to cool at room temperature before refrigerating for at least 4 hours.
- Once chilled, remove from the springform pan, drizzle with additional raspberry sauce, and serve chilled.
