Ingredients
- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- 2 cups cream cheese, softened
- 1 cup granulated sugar
- 3 large eggs
- ½ cup sour cream
- 2 tablespoons lemon juice
- Zest of 1 lemon
- 1 cup fresh raspberries
- 2 tablespoons raspberry puree (optional)
Instructions
- Preheat your oven to 325°F (160°C).
- In a medium bowl, combine graham cracker crumbs and melted butter. Press the mixture into the bottom of a 9-inch springform pan to form the crust.
- In a large mixing bowl, beat the cream cheese and sugar together until smooth and creamy.
- Add the eggs one at a time, mixing well after each addition. Then add sour cream, lemon juice, and lemon zest, mixing until fully combined.
- Pour the cream cheese mixture over the crust in the springform pan.
- Drop spoonfuls of raspberry puree onto the cream cheese mixture and swirl gently with a knife to create a marbled effect.
- Bake in the preheated oven for about 60 minutes, or until the center is set but still slightly jiggly.
- Turn off the oven and leave the cheesecake inside for an additional hour. Then remove and let cool completely before refrigerating for at least 4 hours or overnight.
- Before serving, top with fresh raspberries and additional raspberry puree if desired.

- For a richer flavor, allow the cheesecake to sit in the fridge overnight before serving.
Ingredient Swaps
- Graham Cracker Crumbs: Use crushed digestive biscuits or vanilla wafers instead.
- Sour Cream: Greek yogurt can be used for a healthier alternative.
- Fresh Raspberries: Frozen raspberries work, but drain excess moisture before using.
