Ingredients
- 2 cups chocolate cookie crumbs
- 1/2 cup unsalted butter, melted
- 1 cup granulated sugar
- 3 (8 oz) packages cream cheese, softened
- 3 large eggs
- 1 teaspoon vanilla extract
- 1 cup sour cream
- 1 cup semi-sweet chocolate chips
- 1 cup heavy cream
- 1/2 cup powdered sugar
- Chocolate ganache for topping (optional)
Instructions
- Preheat your oven to 325°F (160°C).
- In a bowl, mix chocolate cookie crumbs with melted butter. Press the mixture into the bottom of a 9-inch springform pan to form the crust.
- In a large mixing bowl, beat the cream cheese and sugar until smooth and creamy.
- Add eggs one at a time, mixing well after each addition. Stir in vanilla extract and sour cream until fully incorporated.
- Fold in chocolate chips gently.
- Pour the cheesecake mixture over the crust in the springform pan. Smooth the top with a spatula.
- Bake for about 60 minutes, until the edges are set and the center is slightly jiggly.
- Turn off the oven, crack the door open, and let the cheesecake cool in the oven for 1 hour. Then refrigerate for at least 4 hours or overnight.
- Before serving, whip the heavy cream with powdered sugar until soft peaks form. Spread over the cheesecake and drizzle with chocolate ganache if desired.
