Ingredients
- 1 1/2 cups chocolate cookie crumbs
- 1/4 cup unsalted butter, melted
- 2 (8 oz) packages cream cheese, softened
- 1 cup granulated sugar
- 1 tsp vanilla extract
- 3 large eggs
- 1/2 cup sour cream
- 1 cup semi-sweet chocolate, melted
- 1 cup heavy cream
- 1/4 cup powdered sugar
- 1/2 cup chocolate ganache (store-bought or homemade)
Instructions
- Preheat your oven to 325°F (160°C).
- In a medium bowl, mix chocolate cookie crumbs and melted butter until combined. Press the mixture into the bottom of a 9-inch springform pan to form the crust. Bake for 10 minutes and let cool.
- In a large mixing bowl, beat the softened cream cheese and granulated sugar until smooth. Add the vanilla extract and mix well.
- Add the eggs one at a time, mixing on low speed after each addition until just combined. Mix in the sour cream and melted chocolate until fully incorporated.
- Pour the cheesecake batter over the cooled crust and smooth the top. Bake for 60 minutes or until the center is set but slightly jiggly.
- Turn off the oven and let the cheesecake cool inside for 1 hour. Remove from the oven and chill in the refrigerator for at least 4 hours, preferably overnight.
- Before serving, whip the heavy cream and powdered sugar until soft peaks form. Spread the whipped cream on top of the cheesecake.
- Drizzle chocolate ganache over the whipped cream layer just before serving. Slice and enjoy!
