Ingredients
- 2 pounds russet potatoes, peeled and cubed
- 1/2 cup unsalted butter
- 1 cup heavy cream
- 1 head of garlic, roasted
- 1 cup shredded cheddar cheese
- 1/2 cup cooked bacon, crumbled
- Salt and pepper to taste
- Green onions for garnish
Instructions
- Place the peeled and cubed potatoes in a large pot and cover with water. Bring to a boil and cook until tender, about 20 minutes.
- Meanwhile, roast the garlic by cutting the top off the head, drizzling with olive oil, wrapping in foil, and baking at 400°F (200°C) for 30 minutes.
- Drain the potatoes and return them to the pot. Add the roasted garlic (squeezed from the skin), butter, and heavy cream.
- Mash the mixture until smooth and creamy. Stir in the cheddar cheese and season with salt and pepper to taste.
