Ingredients
- 4 large russet potatoes
- 1 cup shredded cheddar cheese
- 1/2 cup cooked and crumbled bacon
- 1/4 cup sour cream
- 2 green onions, sliced
- Salt and pepper to taste
- Olive oil for brushing
Instructions
- Preheat your oven to 400°F (200°C).
- Wash and scrub the potatoes, then prick them with a fork. Bake in the oven for 45-60 minutes until tender.
- Allow the potatoes to cool for a few minutes, then cut them in half lengthwise and scoop out some of the flesh, leaving about 1/4 inch of potato on the skin.
- Brush the insides of the potato skins with olive oil and season with salt and pepper.
