Ingredients
- 1 1/2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 1/4 cup granulated sugar
- 4 (8 oz) packages cream cheese, softened
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 2 teaspoons vanilla bean paste
- 4 large eggs
- 1 cup sour cream
- 1/4 cup all-purpose flour
Instructions
- Preheat your oven to 325°F (165°C).
- In a bowl, mix graham cracker crumbs, melted butter, and 1/4 cup sugar until well combined. Press the mixture firmly into the bottom of a 9-inch springform pan.
- In a large mixing bowl, beat the softened cream cheese with an electric mixer until creamy. Gradually add 1 cup of sugar, vanilla extract, and vanilla bean paste. Beat until smooth and well combined.
- Add the eggs one at a time, mixing on low speed after each addition. Then, add in the sour cream and flour, mixing until just combined.
- Pour the cheesecake filling over the crust in the springform pan and smooth the top with a spatula.
- Bake in the preheated oven for about 60 minutes, or until the center is set and slightly jiggly.
- Turn off the oven, crack the oven door, and let the cheesecake cool inside for about 1 hour to prevent cracking.
- Remove from the oven and let it cool completely at room temperature, then refrigerate for at least 4 hours or overnight before serving.
- Serve chilled and enjoy your delicious cheesecake!
