- 8 oz rice noodles
- 12 oz shrimp, peeled and deveined
- 2 tablespoons vegetable oil
- 2 eggs, beaten
- 1 cup bean sprouts
- 1 cup green onions, chopped
- 1/4 cup peanuts, crushed
- 3 tablespoons fish sauce
- 2 tablespoons sugar
- 1 tablespoon tamarind paste
- 1 lime, cut into wedges
Instructions
- Soak the rice noodles in hot water for about 30 minutes until softened. Drain and set aside.
- In a large skillet or wok, heat the vegetable oil over medium-high heat. Add the shrimp and cook until pink, about 2-3 minutes.
