- 3 lbs beef chuck roast
- 1 tablespoon olive oil
- 1 onion, chopped
- 4 garlic cloves, minced
- 2 teaspoons ground cumin
- 2 teaspoons dried oregano
- 1 teaspoon chili powder
- 1 teaspoon smoked paprika
- 1/2 teaspoon black pepper
- 2 bay leaves
- 1/4 cup apple cider vinegar
- 1-2 chipotle peppers in adobo sauce, chopped
- 1 cup beef broth
Instructions
- Heat olive oil in a large skillet over medium-high heat. Sear the beef chuck roast on all sides until browned, about 4-5 minutes per side. Transfer to a slow cooker.
- Add onion and garlic to the skillet and sauté until soft, about 3 minutes. Transfer to the slow cooker.
- In a bowl, mix together cumin, oregano, chili powder, smoked paprika, black pepper, bay leaves, apple cider vinegar, chipotle peppers, and beef broth. Pour this mixture over the beef in the slow cooker.
- Cover and cook on low for 8 hours or high for 4 hours until the beef is tender and easily shredded with a fork.
- Remove the beef from the slow cooker and shred it with two forks. Return the shredded beef to the slow cooker and mix it with the juices.
