- 4 cups all-purpose flour
- 1/4 cup granulated sugar
- 1 tablespoon salt
- 1 cup unsalted butter (cold)
- 1 cup milk (warm)
- 2 1/4 teaspoons active dry yeast
- 2 large eggs (for egg wash)
Instructions
- In a large bowl, combine the warm milk, sugar, and yeast. Let it sit for about 5 minutes until frothy.
- Add the flour and salt to the yeast mixture, and mix until a dough forms.
- Knead the dough on a floured surface for about 5 minutes until smooth. Cover and let it rise for 1 hour.
- Roll out the cold butter between two sheets of parchment paper into a rectangle. Refrigerate for 30 minutes.
- Roll out the dough into a large rectangle, place the chilled butter in the center, and fold the dough over the butter. Roll it out again and fold it into thirds like a letter.
- Chill the dough for 30 minutes, then repeat the rolling and folding process two more times.
- Roll the dough out to about 1/4 inch thick, and cut it into triangles. Roll each triangle from the base to the tip to form a croissant shape.
- Place the croissants on a baking sheet lined with parchment paper. Let them rise for 30 minutes.
- Preheat the oven to 400°F (200°C). Brush the croissants with the egg wash made from whisked eggs.
