Ingredients
- 4 large russet potatoes
- 1 cup shredded cheddar cheese
- 1/2 cup cooked and crumbled bacon
- 1/4 cup sour cream
- 2 green onions, chopped
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Wash and scrub the russet potatoes, then pierce them with a fork several times. Bake them in the preheated oven for about 45 minutes or until tender.
- Once the potatoes are cool enough to handle, cut them in half lengthwise and scoop out some of the flesh, leaving about 1/4 inch of potato on the skin.
- Brush the inside of the potato skins with olive oil and season with salt and pepper. Place them skin-side down on a baking sheet.
- Bake the potato skins in the oven for about 15 minutes, until they are crispy.
- Remove the skins from the oven, sprinkle shredded cheddar cheese and crumbled bacon into each skin. Return to the oven for an additional 5-10 minutes until the cheese is melted.
- Once done, remove from the oven and top with sour cream and chopped green onions before serving.
