- 2 cups cooked chicken, shredded
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 1 tablespoon taco seasoning
- 4 large flour tortillas
- 1 tablespoon olive oil
- Sour cream for serving (optional)
- Salsa for serving (optional)
Instructions
- In a bowl, combine the shredded chicken with taco seasoning, mixing well to coat the chicken evenly.
- Heat olive oil in a large skillet over medium heat.
- Place one tortilla in the skillet and sprinkle half of the cheddar and Monterey Jack cheese on one half of the tortilla.
- Add half of the seasoned chicken on top of the cheese, then sprinkle the remaining cheese on top of the chicken.
- Fold the tortilla in half and cook for about 3-4 minutes, or until the bottom is golden brown.
- Carefully flip the quesadilla and cook for an additional 3-4 minutes until the other side is golden and the cheese is melted.
- Remove from the skillet and repeat with the remaining tortillas and filling.
- Cut into wedges and serve with sour cream and salsa if desired.
