Ingredients
- 1 lb chicken breast, diced
- 1/2 cup bell peppers, diced
- 1/2 cup onion, diced
- 1/4 cup unsalted peanuts
- 3 cloves garlic, minced
- 1 tablespoon ginger, minced
- 3 tablespoons soy sauce
- 1 tablespoon rice vinegar
- 1 tablespoon hoisin sauce
- 1 tablespoon chili paste (adjust to taste)
- 2 tablespoons vegetable oil
- Salt and pepper to taste
Instructions
- In a bowl, combine diced chicken with 1 tablespoon of soy sauce and let marinate for 10 minutes.
- Heat 1 tablespoon of vegetable oil in a large skillet over medium-high heat. Add the marinated chicken and cook until browned and cooked through, about 5-7 minutes. Remove from skillet and set aside.
- In the same skillet, add another tablespoon of oil, then add garlic, ginger, bell peppers, and onion. Stir-fry for 2-3 minutes until vegetables are tender but still crisp.
- Add the cooked chicken back to the skillet. Stir in the remaining soy sauce, rice vinegar, hoisin sauce, and chili paste. Cook for an additional 2-3 minutes, stirring to combine.
- Remove from heat and stir in the peanuts. Season with salt and pepper to taste. Serve hot over rice or noodles.
