Ingredients
- 6 large eggs
- 1 cup kale, chopped
- 1 cup mushrooms, diced
- 1/2 cup shredded cheese (cheddar or mozzarella)
- 1/4 cup milk (or dairy-free alternative)
- Salt and pepper to taste
- Olive oil or cooking spray for greasing
Instructions
- Preheat your oven to 325°F (160°C) and grease a muffin tin with olive oil or cooking spray.
- In a skillet, sauté the diced mushrooms over medium heat until they are soft, about 5 minutes.
- Add the chopped kale to the skillet and cook until wilted, around 2-3 minutes. Remove from heat and let cool slightly.
- In a mixing bowl, whisk together the eggs, milk, salt, and pepper until well combined.
- Add the sautéed kale and mushrooms to the egg mixture, followed by the shredded cheese. Stir until evenly distributed.
- Pour the mixture into the prepared muffin tin, filling each cup about 3/4 full.
- Bake in the preheated oven for 20-25 minutes, or until the egg bites are set and lightly golden on top.
